Gordon is not actually an asshole, he just gets shouty and sweary in the heat of the moment, which looks good on TV, he’s one of the most charming people ever in a casual setting.
Pretty much everyone he’s ever yelled at are professionals who should know better or are people who are fucking up when his rep and business is on the line.
Even in the kitchen nightmare’s episodes where he gets pretty damn pissy, when the owners are reasonable and agree when he points out a fuckup, his anger seems more “how could you let this happen/get this bad?”
Gordon Ramsay is the master of tough love. He’s been through the shit, success, and then failure again after getting a big head. The man knows what works and what kind of standards to keep and actually cares about customers. He knows that if he sugar coats it for somebody’s ho gotten complacent or is in their fantasy land where they are the top of the top that he can’t show them reality so he rips them bakc down to the ground to show them the problems. He has never gotten mad at somebody who didn’t deserve it on some level.
To quote him in almost every season of Hell’s Kitchen “At the end of the day it’s not personal.”
On MasterChef alone Gordon Ramsey walked participants through panic attacks, took being accidentally set on fire by a first time flambé-er pretty well, offered to do the actual killing of crustaceans for vegetarian contestants, and gave internships, scholarships, job opportunities, and recommendations to people that were eliminated if he believed they deserved them.
Gordon Ramsay was yelling at a contestant and accidentally said something that made the contestant remember his abusive dad and started crying and explained that to him and Gordon immediately apologized and never said it again
